Ingredients:
- 500g Rindergulasch (beef stew meat)
- 2 Zwiebeln (onions), finely chopped
- 2 Knoblauchzehen (garlic cloves), minced
- 2 Paprikaschoten (bell peppers), diced
- 3 Kartoffeln (potatoes), peeled and diced
- 2 Möhren (carrots), peeled and sliced
- 2 EL Öl (tablespoons oil)
- 2 EL Tomatenmark (tablespoons tomato paste)
- 1 EL Paprikapulver edelsüß (tablespoon sweet paprika powder)
- 1 TL Kümmel (teaspoon caraway seeds)
- 1 Lorbeerblatt (bay leaf)
- 1 Liter Rinderbrühe (beef broth)
- 1 Dose gehackte Tomaten (can of diced tomatoes)
- Salz und Pfeffer (salt and pepper, to taste)
- 1 Bund Petersilie (bunch of parsley), finely chopped, for garnish
Instructions:
- In a large pot, heat the oil over medium heat. Add the finely chopped onions and minced garlic, and sauté until they become translucent.
- Add the beef stew meat to the pot and brown on all sides. This will enhance the flavor of the Goulash soup.
- Stir in the tomato paste and sweet paprika powder. Cook for a couple of minutes to develop the flavors.
- Add the diced bell peppers, sliced carrots, and peeled, diced potatoes to the pot. Mix well with the meat and spices.
- Pour in the beef broth and add the can of diced tomatoes. Stir in the caraway seeds and add the bay leaf for additional aroma.
- Season the soup with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours until the meat is tender and the flavors meld together.
- Once the soup is ready, discard the bay leaf and adjust the seasoning if necessary.
- Serve the Goulash soup hot, garnished with finely chopped parsley.
