Ingredients:
For Schweinebraten (Pork Roast):
- 3-4 lbs (1.5-2 kg) pork shoulder or pork roast
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 2 onions, peeled and sliced
- 3 cloves garlic, minced
- 2 tablespoons caraway seeds
- 2 cups beef or vegetable broth
- 1 cup red wine
- 2 bay leaves
- 4 sprigs fresh thyme
For Semmelknödel (Bread Dumplings):
- 6 stale bread rolls or buns, cut into small cubes
- 1 cup warm milk
- 3 eggs
- 1 onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Butter for greasing hands
For Speckbohnen (Bacon Green Beans):
- 1 lb (500g) fresh green beans, trimmed
- 4 slices bacon, diced
- 1 onion, finely chopped
- Salt and pepper to taste
Instructions:
- Schweinebraten (Pork Roast): a. Preheat the oven to 350°F (180°C). b. Season the pork roast with salt and pepper. c. In a large ovenproof pot, heat vegetable oil over medium-high heat. d. Brown the pork roast on all sides until golden. e. Remove the pork and set it aside. f. In the same pot, add onions and garlic. Sauté until softened. g. Stir in caraway seeds, then return the pork to the pot. h. Pour in the broth and red wine. Add bay leaves and thyme. i. Cover the pot and transfer it to the preheated oven. j. Roast for 2 to 2.5 hours or until the pork is tender, basting occasionally.
- Semmelknödel (Bread Dumplings): a. In a large bowl, soak the bread cubes in warm milk until softened. b. Add eggs, chopped onion, parsley, salt, and pepper. Mix well. c. Form the mixture into dumplings, greasing your hands with butter to prevent sticking. d. Bring a large pot of salted water to a simmer. e. Carefully drop the dumplings into the simmering water and cook for about 15-20 minutes. f. Once cooked, drain the dumplings and keep them warm.
- Speckbohnen (Bacon Green Beans): a. Steam or blanch the green beans until they are bright green and slightly tender. b. In a pan, cook diced bacon until crispy. c. Add chopped onions to the bacon and sauté until softened. d. Add the steamed green beans to the pan, tossing to coat in bacon and onion mixture. e. Season with salt and pepper to taste.
- Assemble: a. Slice the roasted pork and serve it with Semmelknödel and Speckbohnen. b. Spoon some of the pan juices from the pork over the slices. c. Garnish with fresh thyme or parsley. d. Enjoy your delicious Schweinebraten with Semmelknödel and Speckbohnen!
